Even though Thanksgiving was a couple weeks ago there is still a lot of leftover turkey in my house. Turkey sandwiches and turkey soup get boring. Don’t get turkey fatigue just let – I have a solution: Turkey Enchilada Casserole. My Turkey Enchilada Casserole is a family friendly version of turkey enchiladas. The result is an ooey-gooey casserole where your family will be asking for seconds.
- 2 cups shredded cooked turkey
- 1 container of Roasted Tomato Wholly Salsa (divided into 3)
- Homestyle Wholly Guacamole
- 8 corn tortillas
- 1/2 large onion, diced
- 3 ounces cream cheese
- 1/4 cup green onions (divided by half)
- 1 cup shredded Cabot Vermont Sharp Cheddar Cheese
- 1 tsp Canola Oil
- 1 tablespoon garlic
- Salt & pepper to taste
- Sour Cream *Optional
- Cutting Board
- Cheese Grater
- Large Pan
- Casserole Dish
Preheat oven to 350 degrees. In a large pan set the heat to medium to medium-high. Drizzle the pan with 1 tsp canola oil. When the pan is warm add in the diced 1/2 large onion, garlic, salt & pepper.
Cook until the onions are soft. After the onions have softened add in 1/2 cup Roasted Tomato Wholly Salsa, 2 cups shredded turkey, and 3oz cream cheese. Mix together. Continue cooking until cream cheese is melted and all ingredients are blended.
Set aside the turkey filling. If you haven’t shredded 1 cup Cabbot Vermont Sharp Cheddar Cheese do so now. After using 1/2 cup Roasted Tomato Wholly Salsa you have half of the container left. Split the remaining salsa in half. In the casserole dish spread half of the remainder of salsa. Place 4 corn tortillas over the salsa. Spread the turkey filling across the corn tortillas and top with 1/2 cup shredded cheese & half of the 1/4 cup green onions.
Top with 4 corn tortillas. Spread the remaining salsa, 1/2 cup shredded cheese, and remainder of the green onions. Put casserole dish in preheated 350 degree oven for45 minutes or until cheese is melted & bubbly.
When turkey enchilada casserole is cooled it is ready to serve. Top with a good dollop of Wholly Guacamole and Sour Cream.
